More than 200 chefs across the fleet will take part in a structured curriculum that blends online learning with hands-on assessments at sea. Along the way, participants will complete chef-led courses, quizzes, and practical evaluations, earning certifications at each stage. The initiative was spearheaded by Eric Barale, Executive Culinary Director at Oceania Cruises, alongside Sébastien Canonne, founder of The Butter Book and a recipient of France’s prestigious Meilleur Ouvrier de France honor. Together, they’ve crafted a program that not only sharpens skills but also preserves the rich traditions of French gastronomy—a cornerstone of Oceania’s culinary identity.
And yes, this focus on culinary excellence extends beyond the classroom. The new academy complements upcoming onboard experiences, including the debut of La Table par Maîtres Cuisiniers de France aboard Oceania Sonata in 2027. This new ship, the first in a next-generation class, will further showcase the brand’s dedication to fine dining at sea.
